I love red potatoes because they are so versatile, do not forget all the vitamins that go into a meal if you add the red potato as a side dish. The white potato itself, red skin, or in other ways, has nearly half the daily requirement of vitamin C and about 600 mg of potassium. One of the big questions when preparing potatoes is always the same "To peel or not peel?" The choice is entirely up to you, but if you eat the potatoes with the skins add about 2 grams of fiber per. Serve Mom would be so proud! Remember to keep the potato under cold water when cleaning with a vegetable brush to the skin very well before cooking. Here are some of my favorite recipes red potatoes and I also included some changes.
